Professional Plus - Ovens and combined cooking and preservation systems
Professional Plus ovens are at the pinnacle of performance and versatility. All with electronic temperature control, they allow you to choose from a variety of functions for perfect cooking every time. In addition to their large capacity, they can be configured in double, horizontal, or column configurations to fit into any space. The blast chiller is also highly professional, allowing you to quickly and safely switch from oven temperature to refrigerator temperature (-3°C) or from room temperature to freezer (-20°C). Plus, with the vacuum function, in addition to preserving food, you can cook sous vide like a real chef. Ovens with a full-touch TFT display can be made with a durable and aesthetically pleasing black tempered glass finish.

This performance is achieved thanks to the particular shape of the internal muffle, which uses deflectors and air conveyors concentrated both above and below the pizza. The machine's construction components contribute to this result, allowing it to withstand such high temperatures.
High performance not just for pizza
The pizza oven also performs all the functions of a traditional oven, thus expanding its range of uses. By removing the deflector, you'll get a compact oven that has all the features of a traditional convection oven, with three levels and an adjustable temperature range from 30°C to 400°C.
Standard Accessories
The 400° Pizza Oven comes standard with two deflectors that create the right airflow inside the chamber, essential for perfect pizza cooking. The deflectors also come with two racks that are used both to place the pizza and bake it, and to ensure perfect and even cooking, even on the bottom of the dough. Using the racks will ensure a crispy pizza all over and without moisture. Also included among the accessories is a very useful professional steel peel, perfect for placing pizzas in the oven safely and easily. The pastry board, also in steel, really useful for rolling out and working the pizza, is supplied as an optional.
