REVERSE FLOW SMOKER, INTENSE FLAVOUR
In the "Reverse Flow" smoker, the smoke follows a specific path inside the cooking chamber. It rises along the side walls, descends into the cooking chamber and then smokes the meat in two passes before exiting the chimney. This unique design distributes the heat and smoke evenly, for intense smoking and homogeneous cooking.
In a traditional smoker, the heat and smoke produced by burning wood rise directly towards the cooking chamber. However, in the "Reverse Flow" system, the path of the smoke is designed to optimize the smoking process. Here's how it works
1. Smoke Generation: The wood burns in the combustion chamber, producing heat and aromatic smoke.
2. Smoke Path: Instead of going directly to the meat, the smoke is channeled along the sides of the smoker, until it reaches the back of the cooking chamber.
3. Return to the Cooking Chamber: At this point, the smoke descends back towards the meat. This additional step allows the smoke to completely envelop the meat, ensuring a more intense smoking.
4. Smoke Outlet: After surrounding the meat, the smoke is finally expelled through the chimney, ensuring that the entire process is controlled and homogeneous.
