Professional gravity slicer: SIRMAN models
The SIRMAN gravity slicer is a professional machine designed primarily for the needs of restaurants and large-scale retail trade. Each model is calibrated for a specific use, so as to always offer the best performance and the most useful functions for different types of activities.
How the gravity slicer works
Gravity slicers, also called inclined slicers, take their name from the position of the blade and the plate. These have a more or less marked inclination with respect to the table, which generally reaches a maximum of 45°.
In a professional electric machine, the blade rotates automatically, while the carriage is moved manually. In automatic or semi-automatic models, however, both the blade and the carriage move independently, allowing the operator to manage multiple tasks simultaneously or to assume a more comfortable position, if they have to work on large quantities of food.
What are the advantages of the professional gravity slicer?
The inclination of the blade in a professional gravity slicer varies depending on the appliance and depends on the individual preferences of the operator, but in all cases it offers a clear advantage. Thanks to the inclined plate, in fact, the product tends to slide on its own towards the blade, facilitating and speeding up the slicing process.
This is why inclined models are particularly suitable for all contexts in which large quantities of food are sliced and in which processing times are a determining factor.
Furthermore, gravity models are particularly simple to use and operators do not require extensive training to handle them. Inclined slicers are generally preferred in restaurants with large numbers of covers, canteens and in some large-scale retail contexts.
What can you cut with an inclined slicer
Inclined slicers are ideal for cured meats and hams, but can be used for many other foods. Thanks to specially designed tubes, some models allow you to quickly and en masse slice vegetables such as courgettes, aubergines or tomatoes. Special slides allow you to cut fish comfortably, while slicers with Teflon-coated blades are also suitable for cheeses, because they prevent them from sticking to the metal.

SIRMAN
All SIRMAN professional slicers are made of anodized aluminum, made to the highest quality standards, with high-performance and resistant motors and blades. Some of the most obvious advantages concern their production method and technical specifications:
- The machine elements are made with gravity casting, which unlike die casting allows the use of high-quality metal alloys, more resistant and long-lasting.
- SIRMAN has always been very careful to offer the best possible sliding of the trolley to make the operator's work as easy as possible. High-end machines like the Leonardo feature two high-quality metal bearings, which make them easy to slide even under heavy weights of 10-11 kg.
- In models with interchangeable blades, the carriage's potential is exploited to the full, so there is no loss of lengthwise cutting capacity when larger blades are mounted to achieve greater heightwise cutting capacity.
- The on-board sharpener is perfectly calibrated for each individual appliance and facilitates proper blade maintenance.
- All machines are designed to be as compact as possible in relation to their cutting capacity and to be used on the 70 cm tables typical of catering businesses.
- Depending on your needs, a wide variety of models are available with different specifications, ranging from the position of the blade cover to maintenance accessories and even IoT.
